“El Jardín de las delicias was born out of the idea of bringing a different kind of restaurant to Manizales, Caldas (a small city deep in the Colombian Andean Mountains). We have a seasonal menu that changes every three months and are working very hard in building sustainable relationships with our suppliers (most of them local). We have been open for a year now and the experience have been amazing, we won an award in Colombia’s most important awards as best new cook, and were nominated in three other categories as best new restaurant, best new Colombian cuisine restaurant and best pastry chef. El Jardín is definitely the summary of all the experiences I’ve gather over my cooking career.
Gastronomicom cooking school in France was a very important milestone in my career, I changed the way I saw and perceived food and it opened my mind and showed me that barriers are there to be broken. Samuel was a huge inspiration and an important guide in deciding the direction I wanted to go with my food. Also the opportunity to do stages at three different Michelin starred restaurants taught me discipline, respect and rigor, all crucial aspects in running a restaurant like el Jardín.” Pablo Vásquez
