Our pastry program follows a progressive four-week cycle, allowing students to develop increasingly advanced techniques throughout their training.
About our pastry programs
Whether you are a beginner or a professional, our pastry programs are designed for anyone with a creative spirit, genuine curiosity and a passion for learning. Our philosophy is based on excellence, authenticity and hands-on practice. Classes are taught by experienced French pastry chefs, using fresh, high-quality ingredients. You will learn essential techniques as well as more advanced skills, preparing modern desserts to a Michelin-star level and working through every stage of the process.
The program is progressive, with recipes and techniques becoming increasingly challenging as your skills develop. You simply need to choose the program length that best suits your goals, from 2 months to 1 year.
Study French pastry in an international environment
Every year, Gastronomicom welcomes students from countries around the world. All pastry classes are taught in English, allowing international students to learn French pastry techniques directly in France without needing to speak French before arriving.
A truly hands-on pastry school
At Gastronomicom, you don’t simply watch demonstrations. You cook.
Our pastry courses are based on practical learning. Students work directly in our professional pastry laboratory, preparing recipes themselves under the guidance of our French pastry chef instructor.
With classes limited to a small number of students, our chefs can provide individual advice and help each student progress throughout the program.
Pastry internships in France 
Students enrolled in our long-term programs can complement their training with professional experience in France.
Our 7-month program combines 3 months of training at Gastronomicom with a 4-month internship, while our 12-month program includes a 6-month internship.

Chef Pol Bertholet brings extensive international experience to Gastronomicom, having worked and taught in prestigious establishments in France and abroad, including the École Ritz Escoffier in Paris and the Culinary Institute LeNotre in Houston. Passionate about sharing his knowledge, he combines precision, organisation and technical rigor with a friendly atmosphere where students can enjoy learning and progressing. Step by step, Chef Pol helps students build strong foundations, gain confidence and develop the professional habits needed to master French pastry techniques.
