Epicure Program: two months (8 weeks)Gastronomicom (1)

This program has been created to match both professionals and beginners’ desire to learn or improve their skills in French Cooking and Pastry, by providing exclusive hands-on classes at one Michelin star’s level with highly experienced teachers.

3 possibilities:

  • Cooking courses + Pastry courses : 8 weeks with 30 hours of hands-on classes per week (15 hours pastry lessons + 15 hours cooking lessons per week)
  • Cooking courses : 8 weeks with 15 hours of hands-on cooking classes per week
  • Pastry courses : 8 weeks with 15 hours of hands-on pastry classes per week

 

The 8 weeks cooking modules include:

  • 1st and 5th Weeks: cold starters
  • 2nd and 6th Weeks: hot starters
  • 3rd and 7th Weeks: fishes and sauces
  • 4th and 8th Weeks: meats and sauces

The 8 weeks pastry modules include:

  • 1st and 5th Weeks: breads, viennoiseries, doughs
  • 2nd and 6th Weeks: cakes and entremets
  • 3rd and 7th Weeks: chocolate
  • 4th and 8th Weeks: plated desserts and decoration

Details:

  • All week-ends are free and you will have a 1 week-break to visit France (according the program chosen and the intake date)
  • The modules are structured in the same manner as the Gourmet program module, with of course, different dishes along with a higher level of difficulty
  • For the practical courses, students work in teams in order to help each other and learn togethe
  • For the January, April and September intakes you can also choose Cooking courses + French lessons or Pastry courses + French lessons (contact us for more information)
  • We provide you the lodging in a beautiful Residence, 10mn from the school with Bus (everything is organized) for a very reasonable price
